    bbq brisket

    This is the result of my labor from 7am - 11pm. I enjoy BBQing alot. I have mastered ribs but have struggled with brisket. This one turned out perfect even if I do say so myself.

        Yes this is true if you let me cook it....lol

        I prefer to cut it real thin and let it hit the grill for a quick second...but don't let it get late and don't let me drink too much....or i'll forget what i'm doing.:)

            Thanks guys.

            I was real please with how it turned out. It was/is so tender. Smoking it for 14 hours at about 225 F certainly helps. But I think what really helped was a technique a good ol boy from Kansas City taught me this summer. And that is to put it in foil once the inside of the meat hits 180 F, then keep cooking until it hits 190 F (almost steams in its own juices), then place it in a plastic cooler lined with towels for 1-3 hours.

            I've been practicing my technique and trying rubs/sauces for about three years. I have the pulled pork and ribs down to a science. If I can make this brisket successfully a few more times, I'd like to enter some competition BBQ cookoffs. A coworker of mine participates on a team that is ranked in the top 15 in the country. I'm trying to get him to let me go to an event or two to see what it is really like. But he is simply a helper to the main guy and either is not asking or has not been able to get the guy to say yes yet. From what he tells me, the cooking is just 1/2 the fun. The real fun is from them drinking all weekend. You have HOURS with nothing to do except sit around, monitor the tempurature of the grill/smoker, and DRINK.

                LOL...I live in IL, right along the Mississippi. Anytime Fett. Anytime. Just give me heads up and I'll have some ready.

                Fett, you have some real good BBQing going on down in Tampa as well. If you can get out to the pan handle of FL, you really have some good stuff going on there. If you make your way down to Miami, they do roast pig the best in my opinion. Cubans have a traditional Christmas dinner where they slow roast a pig. I think it is simply called "Christmas Pig". It is AWESOME! My apologies to the NC fellas, I know you all do pig well. But for me, the Cuban style pig roast is the best.

                      You can't really tell the size of the brisket from the pictures. It is simply HUGE. 13.5 lbs. Most the time you get a 2lbs-5lbs from your local store. Once in awhile you can find a 7lb one. Most of the time it is from the part they call the "flat". I ordered a whole "packer" brisket from my local butcher that includes the flat and the point.

                      Fett... does Mandalore + beer+anything ever = bad time? I did not think so :)
